I just did a quick test with this little thing called File Juicer. You can just drag and drop an AI file on it.

I prefer opening the AI file in PS, not an EPS but keep it as an AI file then you get the option to open just the embedded image. Then edit, save as (whatever) then re-link in Illustrator.
