Frying chicken is very hard to master.
You have to make sure you fry it long enough to cook all the way thru without burning the outside. So a medium heat is better.
If I do fry, I usually stick with smaller pieces.. drumsticks/wings.. because a thigh and breast is so thick it takes longer and there's more of a chance it'll be burned on the outside/bloody on the inside..

The trick is medium heat...and COVER the pan...that way it cooks evenly...and you don't end up with charred...or bloody chicken.
