The structure on the little ones is looking very good, but the large one is losing it's crispness. (is that a word?)

Not sure, but you can try this. Put a new layer on top, select the big tutle's head, mask the eyes. and fill the selection with black (in the new layer). Now go to: filters - noise - add noise and play around with the percentages. (turn on monochronic

When you did that, you can lower opacity of the new layer (with the noice) until it fits. Let me know if it worked :-)
