Just out of curiousity, what does everyone use for pita fillings?
I am making a batch now in my bread machine, and want something yummy for dinner in my fresh pita pockets.
I am thinking normal sub/hoagie/grinder fillings? but honestly, I've never had a pita before.
Thanks for any dinner ideas!

Tzatziki.
Drain 16 oz fat free yoghurt through cheesecloth overnight and then mix in:
1 peeled, seeded & grated cucumber
3 cloves crushed garlic (or more if you like it really garlicy like I do)
1 tablespoon chopped fresh dill
salt & pepper to taste.
It's really tasty!!

you've forgotten chopped onion, or scallion of course if you don't have weight problems go for the fat yogurt
a tip if you want to obtain a garlic paste, while crushing them add some sea salt, it will make it a smooth paste.

Tuna. Either the canned variety with Mayo & Relish or a crusted and seared fillet.

FYI, there have been countless "pita filling" threads here in the past, so keep in mind that you don't have to start a new one every time.
That being said...
This is an old favorite recipe of mine. Perfect for when company's coming and you don't have a lot of ingredients on hand:
- Low-fat mayonnaise
- Fresh cilantro
- Organic toenail clippings from a hobo
- Red peppers
I know what you're thinking....."fresh cilantro?!"
trust me, the summery asian zest really pulls the whole thing together.
enjoy!

I take extra firm tofu (the bean curd, not the photochopper! ) and slice it thin. I fry it in peanut oil with some thai peanut sauce until it is a bit crispy.
Then take parsley/lettuce/something green-n-leafy and stuff them both in that pita-hole. I spread some mustard (prefer Dijon) on it and slice of tomato goes in if my fiance is gonna eat it (I HATE tomatos ).
Oh! Forgot one important fact! I heat that pita up until it is ALMOST crispy (but not so crispy that it breaks when you spread its warm toasty lips!!!).
Damn. It is only 9am here, but NOW I"M HUNGRY!!!!!!!!

yes, you shouldnt eat a lot of fat, but some yogurt won't kill you, its all the other fried stuff, eat lots of veggies and fruit and you can eat everything you want.

Wow!
Thanks for actually thinking on the subject and posting some yummies for me!
I am thinking the cucumber one sounds really awesome, light and fresh. Although I have to admit the italian ham & Cream cheese sounds yummy too!
Thanks for the ideas, guys!

Hahahaha.... No grease in the pita. Just a smidge of oil in the dough to make it stick. It's all in the filling, right Dew?
Nice nuts, by the way.
