Hi, I'm a Photoshop neophyte, so this question might seem pretty crude. I have some text that partially overlaps a brackground image (intended as a colorful underline for the text.) The type color is black, but I want the part that overlaps the image to be in white, or some other color. How do I do that?

I am assuming that your text is no longer text and that your image is flat, that is, no layers.
You can select the letters you want changed, either by using the lasso or pen tool (or whatever you like), and just fill them with whatever colour you want. If you use the pen tool, out line the letters you want changed and convert the path to outline, then fill.

i wouldn't be surprised if this werent a job for the magic color wand-- LETS SEE THE IMAGE!!

put a stroke on the text to pick it out from the background

seeing the image could help yeah, also is it flat or do you have layers

You could use the Torellian Votexal Technique if you really want it to look good. Or, of course, you could use one of the LAMER ideas presented here... 
(if anyone needs me I'll be out in my yurt reading my entire Stephen King collection...)

What!? NO ONE wishes to question the validity of the Torellian Votexal Technique?
Only a fool would let such a statement pass without pondering the ethics and Spacial Distortion Potential of such a situation.

I mean, sure, it's a VIABLE solution to the situation here - but I definately wouldn't take my word on it.
Maybe I'm not RELIABLE! You should TEST what I say before you go SELL IT TO THE MOUNTAIN!

I question the validity of the Torellian Votexal Technique!

In response to some of the questions: Here's the image. My text is on a different layer. The part of the title that overlaps the image is what I want to show in white. (BTW, I did find one way to do this. I created a white text layer below the black text. I applied a mask on the black text layer, and then brushed over the part of the black text that overlaps the image. Pretty neat, huh?  )
