Being new to this contest, how could I increase the size of the image and still maintain quality. I had to stomp it down to get below the 75kb required? All help welcomed.

I recommend using the save for web feature to find an optimal compression that does not compromise your picture's dimensions. This is a great pic, but it could afford to be a bit bigger, perhaps 400px wide. Good job, this an impressive early entry.

Also its a good idea to increase your images to resolution 200-300 pixels when chopping, then reduce it back down to 72 when you save it back to a jpeg.
