Do our eyes do this as well, w/o us realizing it?
No, you probably can't see the effect (or defect) with your eyes, for a variety of reasons.
1. In a similar scenario (tall building at a reflection pool) when you look up, the reflection is in your peripheral vision. When you try to focus on the reflection, your eyes shift down.
2. More importantly, our eyes don't work like a regular camera, they don't receive the image on a flat surface. Light enters the eye through the lens and gets projected (and rotated 180°) on the retina at the back of the eyeball. At this stage it's probably more like an image taken with a fisheye lens, and straight lines away from the center are curved. The brain does some magic to a) flip the image the right way up, and b) process the spherical image in a way that to us it is still convincing that straight lines are straight.
3. Magic!

Thanks big time, Vokaris, perhaps this thread can be put in the Tutorials section. To good to get lost.

I do have a little question though.

"When we make photoshops and they are not meant to be Photorealistic chops - Do we still need to follow these guidelines as strickt as you shown them here?"

I am asking this, because - in your gif it seems like - if you just keep your lines moving outward, even under water, you can never go wrong with a reflection. And some of the images show scewed buildings in the water and straight buildings above the water, this probably because the water is closer to the camera then the original building.

If you look at this photo I took one winter, you can even see much more in the water (ice) then you can see above it. Look at the man standing on the machine in front of the building.

Personally I would only use a small section of the bottom of a building and take that as a reflection in the water, continuing the line from above the water under water, leaving the rest out, as if the water is not that smooth to begin with. This way you hint at it, without giving people much to be bothered about.

Maybe that castle-thingy is really tapered in, like Disney's castle. Then the reflection would be correct.
